Good Morning(Or Afternoon/Evening, depends on where you are)!
I hope this finds you well, practicing safe distancing and trying new things to create more beautiful moments and inspirations with your family. I thought that this would be a great way to show what may come in handy during the early days of back to school or anytime. As well as a learning moment for your autistic child/teen/adult or someone that likes to visualize what each step looks like in a recipe( I do!). I like to see what the end game will look like after I complete a recipe. Sure it may not look exactly the same but worth it to at least try something different.  I hope you enjoy these recipes by Tasty! Recipes and more visual recipes from other food vloggers as well. They are so fun to watch from start to finish, but it is also a game changer when you can pause, rewind, slow down and really visualize what each step will look like. 

If anything, this will be a great life skill for your autistic son or daughter and definitely something that he/she will know how to do for the months, days and years to come. Enjoy and Stay Safe out there:-)!



5 Easy Back to School Recipes 

Microwave 5 Minute Mac-N-Cheese in a Mug

(featured in Simply Mama Cooks)




Serving Size: 1


INGREDIENTS

extra large mug (16 oz )

  • 1/2 cup elbow macaroni
  • 3/4 cup water
  • season to taste(I used seasoning salt, onion powder and paprika)
  • 1 TBSP unsalted butter
  • 1/2 cup mild cheddar cheese(shredded)
  • 1 1/2 TBSP heavy cream

Microwave Prep Breakfast Sandwiches (by Tasty!)



Serving Size: 5

INGREDIENTS
2 sausage patties
2 slices ham, quartered
5-6 eggs
Splash of milk
Salt to taste
Pepper to taste
2-3 strips of bacon, sliced width- wise
5 English muffins halved
5 Slices cheddar cheese
Spinach

PREPARATION

1. On a large plate, arrange the sausage and ham in a circle, then place a microwaveable mug in the center. 

2. Crack the eggs into the mug, season with salt, pepper and add a splash of milk. Stir until evenly mixed. 

3. Microwave the entire plate for about 2 minutes until the egg is cooked through, making sure it does not bubble over. 

4. Remove the plate and microwave the bacon strips on a separate plate for about 4-7 minutes, then every minute or so to make sure it doesn't burn.
Drain the bacon of its fat, then set aside.

5. Invert the mug with the egg, then slice the egg cylinder into 5 equal rounds. You may have to run a knife around the mug first to ensure that the egg comes loose in one solid piece. 

6. To assemble, layer your sandwich as you'd like with the meat, egg, cheese and spinach. Wrap each sandwich in a damp paper towel, then with parchment paper. Place the sandwiches in a large zip top bag, then freeze up until 1 month. When ready to eat, remove sandwich from the freezer, unwrap the parchment and microwave for about 2 minutes. Cool for 1 minute, then unwrap the paper towel.

PEPPERONI MINI MUG PIZZA*

Microwave Egg Fried Rice


INGREDIENTS
1 cup Water ½ cup Rice 1/2 tsp Soya Sauce 1 tbsp Vegetable Oil 2 tbsp frozen Carrot 2 tbsp frozen Green Peas 2 tbsp frozen Baby Corn 1 Egg Ground Black Pepper – to taste Salt – to taste

INSTRUCTIONS

1. In a mug, add rice, water, soya sauce & vegetable oil. Cover with a microwave safe plate & microwave high for 6 – 8 minutes. 2. Now add frozen veggies 3. In another mug, whisk 1 egg with salt & pepper. Microwave for 1 minute. 4. Add egg to rice & mix. 5. Eat hot & enjoy!

Microwave 4 minute BBQ Nachos


INGREDIENTS
1 Cup cooked & shredded chicken 3 TBSP BBQ sauce 2 large handfuls of tortilla chips 1/4 cup Pico De Gallo 1 Cup shredded cheddar cheese 1/4 cup green onion thinly sliced guacamole, to serve source cream, to serve .

PREPARATION
Mix the chicken with bbq sauce then spread evenly over the tortilla chips, spread the pico de gallo, cheese & green onions evenly on top ,then microwave for about 1/3 minutes until the cheese is melted & bubbly serve with guacamole & source cream.

The Teen Years in Autism

I think our son is at his highest, in regard to his anxiety level, and thankfully we have been able to get him to talk more about what is bothering him (that doesn't always work) but helping him find his voice and us listening helps him get it out of his system.  We have found a temporary fix to him navigating all of the news headlines of the day and there are a lot and as we all know NONE of it is good news. It is like once he reads a headline, this invades his entire day, and his homework doesn't get done ***SIGH***. So, we have decided to take away his phone temporarily and only return it to him after he is done with his homework. It seems to be working really well and he is definitely not as preoccupied or distracted by the world around him.  School
